These Curried Chicken Pastry Cups are always the first thing to go at parties. The chicken is stirred through a curried mayonnaise, enhanced with sweet apricots and sultanas. All encased within a delicate pastry cup. They are bright, inviting and delicious.

What I really liked about the recipe was the flaky pastry that involves combining a water dough and oil dough. Unlike western pastries, that is short and crumbly, this type of crust is flaky with many layers.

Delicious as a molded appetizer with crackers, or on a toasted sandwich.
