SRBSKA MAKOVA POTICA
Sestavine:
1. Testo: 25 g kvasa 60 g sladkorja 500 g pšenične moke tip 500 1 rumenjak 100 g olivnega olja 2,5 dcl mleka ½ kavne žličke soli 1 limona 2. Nadev: 3 jedilne žlice sladkorja 2 jajca 2 žlici drobtin 2 žlici ruma 200 g maka Priprava: 1. Testo: V posodo za vzhajanje testa presejemo moko, v sredini naredimo jamico, vanjo vlijemo 1 dcl mlačnega mleka, žličko sladkorja in zdrobljen kvas. Pokrijemo posodo in pustimo 10 minut vzhajati kvas. Nato dodamo olje, rumenjak, sol, naribano lupino limone in preostanek mleka. Iz vseh sestavin zamesimo testo, ki ga mesimo toliko časa, da postane gladko in voljno ter se ne oprijema rok in posode. Posodo pokrijemo in pustimo počivati na toplem 60 minut (tako dolgo, da se prostornina testa podvoji), nakar ga dobro pregnetemo, oblikujemo v kroglo, pokrijemo in ponovno pustimo vzhajati če 30 minut.
2. Nadev: Ko testi vzhaja pripravimo nadev. V posodi stepemo jajca in sladkor, dodamo mleti mak, mleko, drobtine, predhodno namočene v rumu, ter vse skupaj dobro premešamo.
3. Nadevanje potice: Na pomokano delavno površino stresemo vzhajano testo in ga razvaljamo na debelino 5 mm. Po njem enakomerno nanesemo nadev, ter pričnemo z zvijanjem, tako da notranji del zvijemo bolj na tesno proti koncu pa na rahlo. V namaščen in pomokan pekač položimo nadevano potico in jo prebodemo z leseno palčko (nabodalom) do dna modela, v razdalji 2 -3 cm. Pekač pokrijemo in pustimo na toplem vzhajati potico še 30 minut (da se njena površina poveča za polovico).
4. Peka: Potico premažemo z mlačnim mlekom. V predhodno segreto pečico na 185 °C položimo pekač. Pečemo jo 50 minut na 185 °C. Pečeno potico stresemo iz pekača, pustimo da se ohladi in jo potresemo s sladkorjem v prahu.
