Kale. It can be overpowering on its own, and many avoid it purely based off its reputation. I used to be one of those people until I found Dino kale. Also called Lacinato or Tuscan kale, it is full of vitamins and nutrients but isn’t as tough to eat raw. You can mix and match the ingredients, but I find the combination I use to be filling, nutrient dense, and super easy to make. I normally make this with diced tomato too, but I was out this time, so I went without. It was still amazing.
