Ingredients:
• 1 package of extra firm tofu
• 1 cucumber
• 1 large carrot
• 1 avocado
• 12-14 sheets of rice paper 
• 12-14 seaweed snacks (or cut
up nori sheets)
• 1 cup jasmine rice
• 1 TBSP rice vinegar 
• 1 TBSP sweetening syrup of any
kind
• 1 tsp salt 
• 1/4 cup soy sauce or coconut
aminos

Directions:
 • Drain your tofu, wrap it in paper towels, and then place something heavy on top and let is press for about 30
minutes
• Rinse and cook 1 cup of rice normally
• Once the rice is cooked add in rice vinegar, syrup, and salt
• Vertically cut your cucumber and the carrot 
• Once tofu has been pressed, slice and then cover each
slice in soy sauce or coconut aminos (on both sides)
