Coffee Chocolate Turkish Delight
Ingredients: For the Syrup 3 cups (600g) sugar 3/4 cup (165ml) water 1 1/2 tsp (6ml) lemon juice 1/4 cup (65g) light corn syrup Pinch of salt (2g) For the Delight: 2 1/4 cups (495ml) water 2 tbsp (8g) house blend instant coffee 3/4 cup (90g) cornstarch 1 tsp (4g) cream of tartar 1 tsp coffee or almond extract 1/2 cup pistachio For the coating 8 oz melting wafers chocolate (dark or milk) Instructions: In a medium saucepan, add the sugar, water, salt, and lemon juice and slice, heat over medium-high, and bring to a boil. Once the syrup is boiled, add corn syrup and reduce the heat to medium-low and simmer it for 15 min. After 15 min, check if the syrup is ready. In a small bowl with cold water, pour 1/2 tbsp syrup, if the syrup thickens in the water the syrup is ready. M
