Watch part 1 to see what you do before bed (its soooo easyyyyy), but heres a reminder:   560g bread flour 113 g starter 236g warm water 10g salt 21g honey  Mix in stand mixer for 5-10 minutes. Cover and let rest on counter overnight. In this video, i divide the dough into 12, then roll into balls and poke a hole in the middle. Let rest for 2 hours before boiling in water (add some brown sugar and baking soda to it just before boiling your bagels). 2 mins on each side. Then 425F oven for 18-22 minutes.
