Ingredients: 1 lb crawfish tails, peeled and deveined 1 lb shrimp, peeled and deveined 1/2 lb andouille sausage, sliced 4 cups cooked rice (preferably day-old) 1 cup frozen peas and carrots 1/2 cup chopped green onions 3 cloves garlic, minced 2 tbsp soy sauce 2 tbsp oyster sauce 1 tbsp Cajun seasoning 2 eggs, lightly beaten 2 tbsp vegetable oil Salt and pepper to taste Fresh parsley, chopped (for garnish) Directions: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
