My sister-in-law emailed me this really easy recipe that's yummy for winter. Take as many assorted pork chops, (if you use the center cut or boneless they tend to be a little drier tasting), and brown them with a little olive oil in a deep skillet with the seasoning you prefer, i just used salt and pepper. After all of them are browned and cut to bite size pieces then add them all back in the pan and cover them with water and simmer them until tender. After they are tender, add as much water as you would like to make it soupy or thick and bring to a low boil. Then you can make dumplings or take the easy way out like I do and roll out canned biscuits, cut in strips and flour them so they won't stick to each other. Once the dumplings are done and the fire is off stir in a couple of chopped up boiled eggs. This is a chicken and dumpling type recipe but with pork chops and every time we've had it, it's been very yummy!! Enjoy!!
