Serves 5-6

* 3lb pork butt or pork shoulder, cut into 1 1/2 inch steak pieces 
* 1/3 cup sugar 
* 3 tbsp oyster sauce 
* 3 tbsp shaoxing wine 
* 2 1/2 tbsp soy sauce 
* 1 tbsp dark soy sauce
* 1 1/2 tsp chicken bouillon 
* 1 tsp ground Chinese five spice 
* 1 tsp onion powder 
* 1 tsp garlic powder 
* 1/2 tsp kosher salt 
* 1/4 tsp white or black pepper 

* Optional: Red food dye 4-5 drops

Start by blanching the pork ribs with green onion, ginger, and cooking wine in water to remove any blood and unpleasant odor.   2. Then, heat some oil and add rock sugar to caramelize it.   3. Add the pork ribs and stir-fry until they are browned.   4. Pour in some hot water, along with green onions, ginger, light soy sauce 1 tbsp, oyster sauce 1 tbsp, vinegar 2 tbsp, and salt. Cover and simmer for 40 minutes.   5. Finally, add another spoonful of vinegar and simmer over high heat to reduce the sauce.  6.
