Recipes I've made and will make again!

*Meatloaf* - 1 lb. of ground turkey, generous amount of honey barbeque sauce, generous amount of bread crumbs, 1 or 2 eggs & parsley. Bake uncovered on 350° for about an hour. *Creamy Chicken Chowder* - melt butter with onions until golden & soft (or melt with onion powder). Add 4 oz. of blocked cream cheese & mix well. Add 3/4 cup of milk, 1 cup of heavy cream & 2 cups of low sodium chicken broth. Add 1 can of coined carrots, 1 can of corn & 2 lg. cans of chicken. Season with thyme, sea salt, black pepper & smoked paprika. Heat on low for 45 minutes while stirring. Add mini pasta if you prefer. *Chili* - 1 lb. cooked ground turkey, 28 oz. can of tomato sauce, 15 oz. can of diced tomatoes, 15 oz. can of black beans, 15 oz. can of red beans, chili powder, taco seasoning & chili seasoning. Add splashes of balsamic vinegar. Add 1/3 cup of water. Mix well. Heat mixture until boil. Lower heat. Cook about 45 minutes. *Zucchini Casserole* - I sauteed diced white onions w/ melted butter. I added coined zucchini (from 2 zucchini logs) with garlic powder and mixed it. Place into an aluminum pan w/ 1 egg, 1/2 cup of heavy cream, shredded Italian blend cheese, shredded sharp cheddar cheese, a bit of shredded parmesan w/ plain bread crumbs on top. I baked at 350° for about hour or so. You will smell the dish cooking (that's when it is done), along w/ being brownish on top. Make broccoli casserole the same way. I boil broccoli prior to use. *See Fried Onion Broccoli Gratin recipe* - I boiled and drained broccoli. I did not roast it. I did not use French fried onions or bacon. I used shredded cheddar and shredded mozzarella. I mixed all ingredients well, then baked in aluminum pan. Spray pan with cooking or baking spray. *Creamed Spinach and Potato Casserole* - I used tator tots. I did not use onions. I used onion powder - make a paste using onion powder & oil. Use Tastefully Simple garlic pepper seasoning. *My scalloped tator tots & buffalo chicken dip are keepers*. Memorized recipes! *Salsa chicken* - cook chicken breasts in crock pot. First, dice into medium size pieces. Add taco seasoning generously to chicken. Allow it to cook for about 8 hours on low. When chicken is done remove it from crock pot. Add mild salsa then shredded cheddar on top of the chicken pieces individually. Mexican corn is a nice side dish with it. *Suggestion* - all soups can be made with canned chicken. *Slow Cooker Penne w/ Ground Turkey* - cook homemade red gravy (use 2 - 28 oz. cans of crushed tomatoes), cook crumbled ground turkey (make just like the chicken alfredo casserole). Drizzle oil in crock pot, layer 1 pound of penne mixed with gravy, add cooked crumbled ground turkey on top, then generous amounts of Italian blend cheese/sharp cheddar cheese. Repeat another layer. Cook on low 4 & 1/2 hours. *2nd time making zucchini au gratin* - I had no heavy cream. I sauteed in pan same as recipe, adding black pepper. I mixed zucchini, garlic, onions & cheese mixture in frying pan then added to crock pot with grated or shredded parmesan, bread crumbs then cream of celery soup on top (1/2 - 3/4 can). Cooked on high 3 hours. *Baked Sweet Potatoes* - 3 large potatoes semi boiled, diced & placed in aluminum pan (spray pan prior), add generous spoonfuls of maple syrup to sweet potatoes, add dashes of cinnamon on top. Bake 1/2 hour, add mini marshmallows & bake another 1/2 hour. *Lasagna* - use no boil lasagna noodles. Gravy at bottom of pan, add 3 noodles, layer shredded mozzarella generously, layer ricotta generously, layer shredded mozzarella generously, add 3 noodles, cover the noodle area with ricotta, add 3 noodles and add gravy on top generously. Bake uncovered on 350° for 50 minutes, then on 375° for 30 minutes. Season ricotta with garlic powder & parsley, add 2 eggs to one large tub and mix prior to use. *Meatball Minestrone Soup* - meatballs, carrots, string beans & corn - 1 can of each, vegetable marinara sauce - 2 regular jars or 1 large jar, mini pasta or tortellini. Great Value Chunky Italian Garden, Pioneer Woman Garden Vegetable or Ragu Chunky Garden Combination marinara. Add chicken broth to soup - 2 cups. Add water to soup - 3/4 cup. Add bay leaves, onion powder or garlic powder, black pepper & salt. If adding That's Amore seasoning, don't add black pepper. Let simmer for about an hour. Add tortellini the last five minutes or so. *Sweet Potato Casserole* - peel & boil 6 medium sweet potatoes. Drain then smash. Whisk together 3 eggs, 1/2 cup of sugar, 6 tbsp. of melted butter & 1/2 tbsp. of vanilla extract. Stir about 3 quarters of mixture into sweet potatoes. Spread evenly in casserole dish. Bake on 350° uncovered for about an hour. Add cinnamon. Add mini marshmallows on top, bake about another 5-10 minutes. *Baked Penne with Sausage Coins* - cooked homemade gravy with red wine vinegar (use 2 - 28 oz. cans of crushed tomatoes), whole grain penne - 1 lb., Botto's Italian sausage - 1 lb., shredded cheddar, fat free mozzarella and Vermont cheddar (from Rastelli's). Slow cook sausage & dice in coins. Add gravy to bottom of aluminum pan. Mix penne, gravy, shredded cheddar & mozzarella generously, add Vermont cheddar slices on top with gravy. Bake uncovered on 350° for about 30-45 minutes. *Summer Macaroni Salad* - elbows (10 ounces), mix 1 & 1/2 cups of mayo with 1/4 cup of pickle juice (for dressing), diced celery, diced hard boiled eggs, black olives (halved), sea salt, black pepper & smoked paprika. Mix well. *Italian Pasta Salad* - Italian dressing, Tillamook sharp cheddar (Target sells it), black olives, chick peas, elbows & tortellini. *Stuffed Pepper Casserole* (tweaks) - I used Angus ground beef, chicken broth instead of beef, brown rice instead of white, 3 ounces of tomato paste & 3 ounces of water instead of tomato sauce. I added 8 teaspoons of crushed tomatoes & onion powder. I minced orange peppers & onions very small to not be seen. *Amigos (Wenonah) for empanada trays w/ creamy chipotle dressing. One-Pot Chicken Florentine Pasta
I used 1 slim jar of Bella San Luci julienne cut Italian herb sun dried tomatoes. I drained 3 quarters of the oil & used the rest to saute the chicken & sun dried tomatoes. I added garlic powder & black pepper prior to the chicken. I added an extra tablespoon of flour to mixture. I partially cooked the dry chicken prior to doing what I stated above, so the chicken would not be watery. I used 1 bag of chopped spinach. I used thin spaghetti.
